  • 1 tablespoon vegetable oil

  • 1 small onion, diced

  • 1 teaspoon minced garlic

  • 1 teaspoon minced fresh ginger root

  • 2 star anise pods

  • 1 (15 ounce) can chickpeas, drained and rinsed

  • 1 (8 ounce) can tomato sauce

  • ½ cup water

  • ¾ teaspoon salt

  • ¾ teaspoon ground cumin

  • ¾ teaspoon ground coriander

  • ¼ teaspoon ground turmeric

  • 1 whole clove, or more to taste

Directions

  1. Heat oil in a medium pot over medium-high heat. Sauté onion until translucent, about 5 minutes. Add garlic, ginger, and star anise. Continue to sauté until just fragrant. Add chickpeas, tomato sauce, water, chile powder, garam masala, salt, cumin, coriander, turmeric, and clove. Reduce heat to medium-low and simmer, covered, until chickpeas start to soften, 5 to 7 minutes.

  2. Mash some chickpeas directly in the pot to give sauce a chunkier consistency. Cover and continue simmering, stirring occasionally, until flavors come together, about 15 minutes. Remove star anise and clove before serving.

DELICIOUS!!! Absolutely fabulous and loaded with flavor. I am so excited to be eating this for lunch right now! This comes together so quickly- it was done before my rice finished cooking! Definitely a keeper.

I make this recipe almost weekly. It is a staple. The directions are concise and accurate. I make it - to the letter - and it is perfection every time. One thing to mention: I double the recipe sometimes, when I know I will want leftovers. Soo glad to find this recipe!

This is an amazing dish, the very first time I made it I strictly followed the recipe and it came out really really well. It tasted like I was eating in a good Indian restaurant! One of my favourite recipes on this site.

Very good! I made a double batch....and ground half the amount of star anise and cloves...as I didn't want to fish them out of the pot. Thanks for the recipe!
