桜切りそば（さくらぎり）は、春の訪れを感じさせる、主に3月から4月にかけて提供される期間限定の「変わり蕎麦」です。更科粉（そばの芯の白い粉）に桜の葉の塩漬けを細かく刻んで練り込み、うっすらとした桜色と上品な香りが特徴で、桜餅のような風味が楽しめます。
