The acclaimed Grasslands Barbecue will sell its signature smoked meats this weekend at a three-day pop-up behind Holy Mountain Brewing in Interbay. But you might want to bring a lawn chair, because it could be a long wait to score its Texas-style brisket.
In years past, barbecue geeks have waited in line for up to five hours, since the briskets and other popular cuts sell out early.
This food truck, from Hood River, Ore., will open at noon on Friday, Saturday and Sunday and, if the past five years are any indication, the meats will sell out by 5 p.m.
Drew Marquis, one of the three owners of Grasslands Barbecue, said his team will haul 5,000 pounds of meat in a food truck, U-Haul and two pickup trucks with a trailer and smoker in tow for the carnivore feast.
For those who don’t want to wait in the line for on-the-spot food, Grasslands will also sell frozen packages of its famed smoked briskets, along with smoked sausages and burger patties, on-site. Though note that its frozen briskets could be sold out by late Friday or early Saturday morning.
The barbecue fanatics will likely be lining up Saturday when Grasslands sells its signature fatty brisket that’s smoked on the premises and sold for that day only. On Sunday, popular items will be its smoked beef cheeks and beef ribs.
For stragglers, the pork belly burnt ends, Hatch chile-and-cheddar sausage and pork belly boudin should still be available by late afternoon during the three-day pop-up.
