Spumoni cake finished and cut, unreal flavour profile. All my own recipe 👌 Cherry olive oil cake, chocolate ganache, with a pistachio Swiss merengue buttercream icing.
This is my first time making my own recipe and I’m so happy with how it turned out! It’s a cherry olive oil cake and it will be the base for my “spumoni cake” It will also have a chocolate ganache filling and a pistachio buttercream icing!
I used a rice wine and cherry juice along with frozen cherries to get the desired cherry taste!
Can’t wait t’git my hands on nem cheap eggs!
Prep day is complete and I’m so happy I did everything I wanted to, and it all went well. Cake bases are done, moist and not over baked. Both the blackberry sage coulis and soak are made and stored away. I also made my gravy and cranberry sauce today as well. Got lots done!
Just finished planning my Christmas menu and shopping list. Main: Turkey Side: Sweet potato casserole Side: Fennel apple squash roasted salad. Side: Stuffing Bread: Brazilian Cheese buns Sauce: gravy Sauce: Cranberry Dessert: Chocolate w/blackberry sage compote cake
Cut a tester slice. Husband gave the key-lime tart a 10/10. Now I’m debating putting marshmallow fluff on top and broiling it…would that work?
Tried to do the pumpkin tarts again today but made a home made caramel to layer between the shortbread crust and the pumpkin. That’s 100 percent what it was missing imo to make this a 10/10 desert….also making caramel is HARD.
Back home and celebrating by making a warm and hearty Thai curry with roasted pumpkin.
So excited to head to Canada to see my family for a few days. I miss them so much. Ian’s staying behind to work on a big video he’s passionate about so it’s a solo trip for me! Enjoying breakfast and listening to tunes.

When I was a kid I convinced myself that a hotdog bun full of carrot sticks, topped with lays chips was peak cuisine and I hyper fixated on it for 2 years straight.
I made pork braised with char siu tonight for dinner. This one made ian do a little dance.
I started making batches of scones and freezing them so I can have bakery quality scones for breakfast when ever. Today I have a cinnamon raisin (left) and pumpkin spice scone (right)
Every one is full and cozy and ready for bed ☺️

The one thing I’ve gained from moving to the US is experiencing real Mexican food. I had no clue how warped my concept of real Mexican food was growing up in Canada.
It’s cold out so I’m making Pozole Rojo for dinner. Time to leave it to simmer for a few hours.
I can’t believe how long my hair is getting now. It’s been years since I’ve had my natural hair at this length. It feels so healthy which is a big self esteem booster.

I love the idea of baking and cooking for others because I can adjust what I’m making to the seasons and even what’s going on in their lives. I feel like I’m making potions that give different benefits in an MMORPG.
I’m so proud of my first attempt at an eclair! Perfectly hollow and the flavour combo was really nice.
Making gluten free eclairs with a cardamom whipped filling and an orange white chocolate ganache top today.
Just used and African net sponge for the first time in the shower and holy shit does my skin feel SMMMOOTHHH. Please if you haven’t. Make that purchase asap.
Ian said this is the best dessert he has ever had. The secret is putting espresso in the caramel.

Happily walking to get dinner supplies, no aches, no fatigue, no constant headache, no chest pains. Just happy to be out in public. I won’t have to lie down when I get home. Even ignoring what it’s done for me mentally. Physically it has changed my life.

Ian told me he was craving a specific Mediterranean bowl he ordered from a cafe once. So I decided to recreate it at home tonight. Including a zaatar fried tofu and eggplant.
Thinking a lot about my dad and my best friend blitz today. How painful loss is especially when it’s two beings who I loved deeply in different ways. Both taken away too early. one slowly and the other sudden. I miss them. They were both very special souls.

Messed up the lamination but baked them anyway. They look ok but I want those big air pockets you get from good lamination. Trying again tomorrow.
I tried to laminate my dough and the butter was still too cooolllddd ahhh it shattered and now I have to start again.
Did a lot of research on how to mimic the protein structure of gluten so I can get a good rise and flake on my gluten free croissants. Turns out psyllium husks are the answer! I will report back tomorrow when I laminate and bake.

So…i accidentally added like 150 grams of powdered sugar instead of flour…no wonder the dough was so wet and needed a lot more flour. Ugh…
Doing a second round of attempting to make puff pastry. I want to really nail the flakey texture I love at high end cafes. First lamination already looks so much better because I’m working faster. So excited to see how these turn out tomorrow.

I know this sounds so dumb but I have aspirations to have a little hanging fruit basket in my kitchen.
I have found so much purpose in cooking and baking. I love trying stuff and failing. I love problem solving. I love getting a huge reward from solving the problem. I also think being on SSRIs has allowed me to actually have the gift of self satisfaction. I’m so thankful.
I’m so excited that I’ve learned how to make gluten free puff pastry because this means I can now make savoury pies for ian. I know he really misses chicken pot pies.
