Kombucha is a tea that contains acetic acid bacteria, which are alcohol-degrading enzymes, and is now popular overseas, especially among trendsetters, and has become a standard drink after sauna in Europe.
At Kombucha Brewery Tokyo, we use ingredients from traceable producers whenever possible, and we carefully handcraft each batch by personally preparing and fermenting the kombucha while visually and taste-testing its fermentation progress.

Watanabe Sake Brewery
Tanomachi Ko 2032-1, Miyazaki City, Miyazaki Prefecture
A shochu brewery known for its flagship brand "Asahi Mannen." Located in Tanomachi, Miyazaki City, a rural town dominated by rice fields and farms. The town's symbol is Mount Wanitsuka, which spans Miyazaki City, Nichinan City, and Mimata Town in Kitamorokata District, showcasing its majestic form. The warm climate and lush natural environment of southern Kyushu provide the perfect setting for brewing "Asahi Mannen." Fourth-generation brewer Koichiro Watanabe aims not to create shochu for the masses but to craft a drink that even one in ten thousand people would find truly delicious. With a commitment to doing the ordinary extraordinarily, he and his family and brewery staff carefully craft each batch with heartfelt dedication. Enjoy the taste of their meticulously made shochu.
Kodama Brewery
Obi 8-1-8, Nichinan City, Miyazaki Prefecture
This shochu brewery is represented by the sweet potato shochu "Toji Junpei," which is crafted by the current master brewer, Junpei Kanemaru. The "Obi" area, where Kotama Brewery is located, is a charming place that retains much of its castle town atmosphere and ambiance, attracting tourists from within and outside the prefecture, as well as from around the world, who come to stroll through the town. In their sake brewing, they uphold the theme of "Brewing with Single-Minded Devotion" and insist on the "hand-made koji" method, which is practiced by only a very few breweries in Miyazaki Prefecture. This method involves no machinery and is entirely done by hand, from the initial rice washing to the final stages. All the brewery staff are united in their commitment to brewing, aiming to deliver shochu, Japan's cultural and national alcoholic beverage, to the world.
Yanagida Sake Brewery
Hayasuzucho 14-4, Miyakonojo City, Miyazaki Prefecture
This is the oldest shochu brewery in Miyakonojo City, Miyazaki Prefecture, which features flagship brands such as the barley shochu "Akakage" and the sweet potato shochu "Senbonsakura." Taking advantage of the pure and abundant spring water and the climate suitable for fermentation in Miyakonojo City, located at the southwestern tip of Miyazaki Prefecture, the brewery is particular about all ingredients, including barley, sweet potato, and rice. The representative of the brewery is the fifth-generation master, Tadashi Yanagida, who is a former engineer and is called the Edison of the shochu world. He customizes the distillation apparatus himself to create a unique flavor. He believes that shochu is a "living thing" whose taste and aroma variety expands infinitely depending on changes in ingredients and brewing methods, and he carefully expresses the sincerity of the ingredients.
Oyama Jinshichi Store
Nishikata 4657, Ibusuki City, Kagoshima Prefecture
Founded in 1875, Oyama Jinshichi Shoten's shochu is born in Ibusuki, which is surrounded by abundant nature. Nearby is Karafunekyo, which is known as a place of famous water (certified by the Ministry of Land, Infrastructure, Transport and Tourism as one of the 100 best water towns), and Miyagahama spring water is used for brewing water.
Ibusuki is a land characterized by a subtropical climate that is also called the "Hawaii of Japan" with a high annual average temperature of about 19 degrees Celsius due to the influence of warm currents. It is also known as the northern limit of the land where cycads grow wild and the black-legged butterfly, which is said to be a "butterfly that calls happiness", flutters.
Under these blessed environmental conditions, the brewery carefully brews shochu using sweet potatoes grown in the fertile land of South Satsuma and natural water, putting dedication into every single drop. Furthermore, since 2019 (Reiwa 1), the brewery has also started producing craft gin, and they also create distinctive gins that incorporate botanicals unique to Ibusuki.
While cherishing the traditions that have been passed down, we continue to evolve with the times and continue to create unique spirits.
Tenbai Sake Brewery
978 Moriyama, Chikuzen-machi, Asakura-gun, Fukuoka Prefecture
Tenpai Distillery, located in Chikuzen Town, Asakura District, Fukuoka Prefecture, is a passionate producer dedicated to the theme of “creating distilled spirits we can proudly share with the world,” and the concept of “delivering new distilled spirit experiences that bring happiness to the dining table.” Using 100% two-row barley grown in Fukuoka and Saga Prefectures, and making the most of high-quality ingredients from the Chikushi Plain and pure spring water from the Kokura mountain range, Tenpai has established a unique style that maximizes the flavor of barley through its original double distillation at atmospheric pressure. Committed to natural production methods, the distillery practices sustainable shochu-making that circulates local resources. Furthermore, by studying sake brewing techniques, Tenpai pursues a new style of shochu that doesn’t “cut” the flavors of food, but rather “complements and enhances” them—creating shochu that, while a distilled spirit, pairs with cuisine as harmoniously as a brewed beverage.
Kombucha Brewery Tokyo

A craft kombucha brand born in Shibuya, Tokyo, launched in 2021.
With the concept of "#KombuchaThatShapesMe," this craft kombucha is free of preservatives and artificial flavors, offering a delicious daily gut-health routine and the joy of a toast-worthy drink.
It features the rich flavors and aromas of natural wine, along with a refreshing acidity.

Frequently Asked Questions
Does KBT have an expiration date?
The expiration date is about 2 months for the shortest one. It depends on the product, so please check the bottle notation for details.
Does "Totonootto" deliver a different flavor of kombucha every month?
At "Toto Otto", we mainly deliver two types of kombucha: "sencha" and "holy basil". Therefore, you will not receive a completely different taste every month, and there will be months when you will enjoy the same flavor. However, depending on the season, special flavors may be added, and you can enjoy the changes that are unique to that time of year.
Some products have "liqueur" written on the back label. Are they not shochu?
This product is barrel-aged shochu, but under Japanese liquor tax laws, there are restrictions on the "depth of color." If the color exceeds the standard, it cannot be shipped as shochu. Therefore, a small amount of dietary fiber is added, and the product is categorized as "liqueur." Rest assured, the contents are genuine shochu.
The applicable shipments are those for April 2025 and November 2025.
Can this be bundled with regular products?
We are unable to combine regular orders with 'Totonootto' for shipping. Thank you for your understanding.
Can I purchase the 'Totonootto' subscription service starting mid-term?
This subscription service is a limited-time offer available from April 2025 to March 2026.
You can apply mid-term, but reservations will close once the maximum number of subscriptions is reached.
Is it possible to pay for several months at once?
We do not accept lump sum payments.
When is the shipping date?
The shipping date is scheduled for the 15th of each month. Delivery takes approximately 2–3 days after shipping, depending on your location.
