Why are Old Fashion cracked?
Old Fashion are made by deep frying the dough from the bottom. When the dough is deep-fried, the starch and protein solidify and brown. When the dough is flipped over and deep-fried, the gas generated by the baking powder escapes from the soft surface of the dough, creating a beautiful crack in the dough.
