My personal head canon fur interspecies breeding in an anthro universe is that in almost all cases, the offspring will be the same species as the mother. So theoretically two completely different anthro species can still breed, if a male fox and female rabbit have kids, all of their kids will be rabbits. They can still inherit traits from the father, like eye color, height, and possibly even behavior, but the species is almost always just going to be the mothers. I say almost since maybe there can be a few instances where a child can be mixed species, like if the parents are of a similar enough species like a tiger and a lion or something, but that could be like very rare or something.
And to balance things out the mother and children inherit the fathers last name, to try to keep it somewhat equal
