Smoked Chile Scalloped Sweet Potatoes

  1. Preheat oven to 375 degrees F.
  2. Whisk together cream and chipotle puree until smooth.
  3. In a 9 by 9-inch casserole dish, arrange the potatoes in even layers. Drizzle with 3 tablespoons of the cream mixture and season with salt and pepper. Repeat with the remaining potatoes, cream, and salt and pepper to form 10 layers.
  4. Cover and bake for 30 minutes, remove cover and continue baking for 45 minutes to 1 hour, or until the cream has been absorbed and the potatoes are cooked through and the top is browned.

I have made this recipe numerous times over the last 10 years plus. I usually use regular milk instead of cream or a mixture of the two. I think the liquid mixture is too much. I layer the sweet potatoes, then spread some of the chipolte sauce, salt and pepper, repeat until all the potatoes are used. It's perfect every time! I just love this recipe.

Delicious!  I made a small batch of this in preparation for Thanksgiving to try it out first and it was delicious.  I couldn't stop eating it.  I made it again for Thanksgiving and it was a big hit.  I made the chipotle pepper puree by blending down the contents of a can of Goya Chile Chipotle and then putting it through a fine mesh strainer to remove the seeds.  I've already shared this recipe with my sister and will definitely be making it again, either for holidays or when company is over.
