2022 was a year blessed with sunshine, so we harvested early to preserve the acidity.
The dosage (added sugar) is 6g/L, striking a balance with the bitterness!
The wine is pure with fine, gentle bubbles, featuring the pleasant fruitiness and juiciness characteristic of Chenin Blanc, sharp acidity, and a subtle blend of bitter, chalky minerality.

Tototokombu is a brand born from a welfare project called 'Fukushon!'.
With this lightly pickling salt, simply toss your favorite vegetables and let them rest in the refrigerator overnight for delicious pickles infused with the aroma of grilled mackerel flakes and aosa seaweed.
The mineral nuances reminiscent of sparkling wine blend with the aosa seaweed in this salt, expanding the depth of flavor.
