This is the ideal post-Easter cocktail. If the idea is to introduce folks to new concepts, it has been a major misconception that whiskey drinks are not versatile enough to be in a spring cocktail. They are some of my favorite spring cocktails historically (see: the paper plane, the whiskey sour and the penicillin).

The theme was wrapped up nicely by using Rabbit Hole Bourbon (Louisville, Kentucky) whose name combines the visuals of Easter, spring and the whimsy of “Alice in Wonderland” together with a bow. It also has a high rye content for a bourbon which blends nicely with the lighter ingredients as well as the amaro in the drink. The cocktail is buoyant, light, refreshing and has the mint on the backend to reflect spring. Plus, it is Craig Melvin’s favorite spirit mixed with Sheinelle’s favorite flavor profile (she loves the ginger-lemon combo), so it was well tailored for this show.

This drink will be available all summer at Pebble at the Rink, Pebble Bar’s outside venue at the famous ice rink at 30 Rock.

Technique tip: If you want to make it a touch sweeter, you can add 1/4 ounce of brown sugar syrup. I like it a little less sweet, but some folks prefer the kick.
