Andy McKay will be the first to admit that he is not a conventional hotelier. With his wife and business partner, Dawn Hindle, McKay has pioneered a new genre of accommodation, specialising in Ibiza-based hostelries where a good night’s sleep is available but perhaps not central to the offering.
