"Ooeeee" is not the only thing you'll be hearing when watching Muay Thai in Thailand... here are some other common sounds and what they mean:
Ow dee = "come on!"
Oi = reflects unexpected shock, such as when your teammate gets dropped in a fight
Tee = "hit" or "strike" but specifically with the knee
Ayy = reflects confidence in the fighter's assured victory. basically "you got nothin on us!"
