This lots coffee cherries are harvested from October - January from smallholders in the region and taken to the washing station in the Adola Woreda (District). The coffee is de-pulped and separated before going into large tanks for soaking. The beans are then covered in water and wet-fermented for 12-24 hours to remove mucilage. After fermentation coffee beans are rinsed thoroughly in channels to remove the last bits of mucilage and further separate any floaters. Coffee beans are then moved to raised beds to dry in the sun for 10-15 days until moisture level reaches 10-12%. On very hot days they may be covered in plastic to control the rate of drying. Dried beans are then stored in parchment for protection until milling and export preparation. As a minimum requirement the coffee goes through colour sorting and hand sorting tables three times during milling to improve quality.

Each box is 200g and roasted for filter coffee, although we do use this for espresso in store.
