I think it’s all of our civic duty to watch Legally Blonde 2 ahead of this holiday weekend. Historic. Monumental. Iconic. Makes me want a hot dog reeeeeal bad.

Below I have a full roundup of recipes I think you should make for your festivities this week + 2 hot new recipes!!!

  • s’mores ice cream pie

  • hoagie woagie pasta salad with pepperoncini basil mayo

I’m really picturing myself, fresh out of the pool, hair wet, making a pasta salad, while snacking on some watermelon cubes. Blissful. In reality, I’ll be hosting at my apartment, no body of water in sight, but surely the sweat dripping off my face will give me the much desired wet effect.

But regardless of what situation you find yourself in this week, your second civic duty is to make a pasta salad. That’s first and foremost. Fourth of July without a pasta salad, you may as well just call it a regular thursday. A winter thursday!!! Here’s a list of acceptable pasta salads for you to choose from:

pasta sal’s:

  • strawberry caprese hottie, recipe here

    • light + simple + hot. pairs perfectly with grilled chicken, or steak

  • peaches ‘n cream, recipe here

    • my #1 most popular pasta salad to date. for good reason, it slaps and if you doubt it - try it. perfect time with peach season.

  • grilled summer veggie, recipe here

    • SO easy to make with the grill already running, also one of my personal favorites. so fresh and flavorful - trust. vegetarians will go crazy too.

  • crispy prosciutto + burrata, recipe here

    • bursting with freshness. delightfully scoopable. hard to stop eating.

  • the godfather, recipe here

    • a classic, a staple. you absolutely can do no wrong with it. that’s why it’s godfathered in.

Next up, before drinks (which are equally important, but not assssss important) dessert. I mean if you don’t have a lil something cold and sweet for me….we have a problem officer.

somethin’ sweet:

  • key lime pie pavlova, recipe here

    • this is one of my favorite desserts I have ever made. my bf confirmed it’s at #1 for him. have made it 3x now. rave reviews, feeds a crowd.

  • s’mores ice cream pie, recipe below

    • well i know I just said that was my fave dessert, but then what would I say about this pie……I mean it’s seriously summer in a dessert.

  • the perfect fruit salad, recipe here

    • it does exist, and this is how to make it. fab for a crowd and just a little more elevated than your usual fruit plate

  • eton mess lemon curd cake, recipe here

    • if you’re feelin’ a whole ass cake, this should be the one you make.

    • if you prefer a strawberry vibe, go for th

      is variation.

Okay nooooow we can move on to drinks. Drinks that specifically taste like sunshine, rainbows and butterflies. Summer is my favorite season for a cocktail, not only because the demons within me leave my body as soon as it’s 80 degrees, but all the ingredients are so ~refreshing~ and easy to drink.

bevs:

  • a really good kiwi cucumber marg, recipe here

    • this is one of my fave cocktails - it’s definition fresh.
