Bake bacon + garlic(optional)

Take pan of heat source for a full minute
Add eggyolks mix, and keep stirring

My head chef always had us add all of the hot ingredients mixed together to a mixing bowl with an egg, pepper and cheese all vigorously whisked together. The temp from the cooked ingredients brought the egg mix up perfectly to get that desired sauce like result.

Some people (A FRIEND OF MINE) get crippling anxiety. Literally crippling. Got into my first kitchen last year and if it wasn't for a couple tiny tokes before and on my break i'd have probably burnt the place down on anxiety alone. I'm never blazed though, a couple tokes to ground me and thats it
