James G. Priovolos arrived in America at 19 with nothing but a dream that someday, somehow, he would be able to do well enough to help his poor Greek village better itself. By the time of his death last week at age 79, he had done that and much more.
Over the years he gained a new name, Jim Christie, countless friends and thousands of loyal customers of his seafood restaurant, one of the oldest in Houston. It was not his creation - Theodore Christie, another Greek immigrant who Americanized his last name, founded it in 1917 in Galveston. But it was his hard work and ambition that helped it to flourish through decades of changing tastes and increased competition.
