Nestled between misty mountains and the Sea of Japan, Fukui Prefecture evokes in visitors a sense of ancient Japan. Its water falls first as rain on the triple peaks of Hakusan Mountain, then filters through to the subterranean Kuzuryu—river of the Nine-Headed Dragon. The water is soft, and picks up subtle flavor nuances not easily captured by breweries with mineral-rich hard water. Kokuryu Brewing Company has used it since 1804 to make sakes that are full of flavor, yet smooth and elegant.
