This is obvious of you take at a very extreme example. What if there is one wave this year killing 100 people with an average age of 84 If you have another wave in 10 years with 100 people dead then the people dying will still most likely be 84 years. Another group of people

If you assume the same number of people dead at the end then you have only postponed deaths if the average age of the people dying increases Otherwise it is just other people dying

Also, scientists do examine animal entrails for things like signs of disease pathology and virus replication. Without animal models of disease and transmission, we would understand even less than we do about SARS-CoV-2 biology.
