がんすとは、広島県で主に生産されている魚肉練り製品のひとつ。
かまぼこ原料のすり身に野菜や一味唐辛子などを混ぜ、長方形に成形し、パン粉を付けて揚げた製品。魚ロッケ（佐賀、大分）や赤天（島根）などと似たタイプの揚げ蒲鉾。薩摩揚げ（鹿児島など）やじゃこ天（愛媛など）と違い、パン粉をつけて揚げている。きつね色に揚がったパン粉の香ばしさとサクサクとした食感、野菜の甘味などが合わさった後を引く食味が特徴。
生産している蒲鉾屋の軒数自体は減っているが、現在も広島市の草津地区や呉などでがんすは作られ、地元のスーパーなどで販売されている。また対岸の愛媛県にも製造販売する業者が存在する。
名前の由来は、広島弁の「がんす」（「～です」の意味）。広島市西区草津の蒲鉾屋 網節商店（閉店）、または、呉市広の岡本蒲鉾店が最初に名づけたなどの説がある。
