Muslims can convert a Hindu temple into a mosque but Hindus can't do it the other way around because Hindus have to follow vastu shastra. Buildings that haven't been built in accordance are considered impure and hence deities won't come to reside in them.

The Cathedral was a pagan site during Roman era. It was turned into a Christian place of worship during the Visigothic era and then Islamic during Arab/Moor. After Reconquista, it was converted back into a cathedral. Muslims seem to be unfit to build any sites of their own.

Ofcourse, it does. It represents the desecration of sites sacred to another religious group. Muslims do it as a sign of victory over other religious groups when they can easily make another mosque on their own.

Does it matter? these temples were often commissioned and owned by Kings and aristocrats. The same Kings and aristocrats converted these temples into mosques
