I can find approximately nothing on working with him on the internet, is this something people don’t do or am I not looking in the right places? :P anyone have any experience with this particular deity? Thanks in advance!
Here's a small devotional book for him. There's also a few decent scholarly books, most notably Asklepios: Archetypal Image of the Physician's Existence by Carl Kerenyi. And an interesting book by a therapist about using the dream incubation techniques of Asklepios' ancient sanctuaries in modern healing work.
I'm afraid there probably aren't many modern polytheists devoted to him particularly, so you're going to have to go back to the source material and build cultus from there. But, we have a lot of source material!

It seems some others have given you good cult references... if you want to do some retro-construction from modern interpretation, take a look at the Catholic St. Bartholomew. Tiber Island in Rome was Asclepius' island, his temple was built over to build the basilica to St. Bartholomew. However, the island to this day remains an island of healing, with a hospital built upon it.
Catholics are pretty notorious for christianizing pagan deities, and from what I recall of my time in Rome, Bartholomew seemed pretty similar to Asclepius, and the Island still feels really pagan under the surface.
As an ex Catholic, I notice that the Catholics ate everything :P I’ll look it up, thanks for pointing me to it!
