Restructure app navigation
Create a switch navigator that contains the stack for the main app, the auth, and the gathering screen. Because the JitsiMeet screen in a stack navigator has a bug where you can tap over the screen and it fires the taps on the previous screen components too

Developer@ottman This is part of the update of react-native to the version 0.61.2 and to the new version of the jitsi SDK
This task is an internal restructure of how the navigation is configured in the app, nothing will change for the user.
This update is a fairly large task so I divided it into smaller tasks.
