If san-serif fonts are the easiest to read on a screen and serif fonts are easiest to read on paper, then why do many major websites use serif fonts for their main font? I've been wondering about this for one week now.

Brand coherence and creative direction.

The whole "serif is easier to read for blahblahblah" has been debunked by the way, the human mind when reading doesn't look at shapes of each letter but instead analyze the positive and negative space as a whole.

Serif fonts are easier to read on displays because their simpler form requires fewer pixels to maintain legibility.

However, considering the recent trend in web design is making all type on website be fucking enormous, it kind of overrides that point.
