MSG is pretty cool if you don't go overboard with it. Some ppl claim to be allergic against it, not me.

If you prefer your food to taste bland, you're free to not use it. Yumami is a thing, you know?

Been to a chinese restaurant 2 years ago to celebrate my grandpa's birthday. They were advertising with "no MSG" and "organic". It was awful.

Scientists have debated whether umami was a basic taste since Kikunae Ikeda first proposed its existence in 1908.[11][12] In 1985, the term umami was recognized as the scientific term to describe the taste of glutamates and nucleotides at the first Umami International Symposium in Hawaii.[13] Umami represents the taste of the amino acid L-glutamate and 5’-ribonucleotides such as guanosine monophosphate (GMP) and inosine monophosphate (IMP).[14] It can be described as a pleasant "brothy" or "meaty" taste with a long-lasting, mouthwatering and coating sensation over the tongue.

The sensation of umami is due to the detection of the carboxylate anion of glutamate in specialized receptor cells present on the human and other animal tongues.[15] Some 52 peptides may be responsible for detecting umami taste.[16] Its effect is to balance taste and round out the overall flavor of a dish. Umami enhances the palatability of a wide variety of foods.[17] Glutamate in acid form (glutamic acid) imparts little umami taste, whereas the salts of glutamic acid, known as glutamates, give the characteristic umami taste due to their ionized state. GMP and IMP amplify the taste intensity of glutamate.[18] Adding salt to the free acids also enhances the umami taste.[19]

Monosodium L-aspartate has an umami taste about four times less intense than MSG whereas ibotenic acid and tricholomic acid (likely as their salts or with salt) are claimed to be many times more intense.[19]

I buy MSG salt from a local asia shop, and use just a pinch when I'm cooking. It simply makes food taste more intense and satisfying, and I never had any of the alleged side effects like headaches or sweating, and my guests never complained either. Some "regular" food like tomatoes and cheese products have MSG naturally for all I know, which might be why people like to add them to their dishes.

Food is science, bro. Just because you gulp it down doesn't change the fact that there are some complex chemical reactions in your stomach, digestive system and on your taste buds. A friend of mine is a professional cook in a 3 star restaurant and had to learn all sorts of crazy shit during trade school.

Just posted this in the Chinese food thread. I use that stuff in most of my cooking. Little sprinkle of msg on some scrambled eggs makes them so much more flavorful.

There's nothing wrong with it. If there were you'd know by now. It's in just about everything that doesn't specifically say it has "No-MSG".

I agree, a tiny pinch makes a world if difference in otherwise bland foods.

I've never had any problems with a little MSG. But once you add too much it starts to taste.... weird and unpleasant, dunno how to describe it.

>>12715756
Lots of foodstuffs has MSG naturally in it, it's just that most of it (in pure salt form) comes from asia where they extract it frorm algae or something.

I'm not claiming that I'll never eat MSG, you fucking militant spergs, but I don't see the point in adding it to things that don't need it in place of actual flavor. Companies that use MSG instead of making actually good products are not good value for the money.

If I want to eat MSG or cook with MSG, I'll buy MSG. I don't like to waste money buying cheaply made mass-produced cans of shit that need added chemicals to be palatable.

All wrong. Reality is subjective and taste comes from food reacting with our souls. No amount of acids or glutimans can account for the most important ingredient of all: love.
