I work in retail and let me tell you, when one of "them" walks in, we all head for the hills. Nobody wants to risk getting fired if a "sir" slips out. I've said this before but humans default to sexed pronouns. It takes thought and effort to use "she" for an obvious he. Something busy retail workers don't have time for. Its a risk nobody wants to take.
