Doubling a word to contrast it with a different form of the same word—like ‘book-book’, rather than ‘e-book’—is called CONTRASTIVE FOCUS REDUPLICATION.

Yeah, I agree. There’s basically one paper on it (“the ‘salad-salad’ paper”) and I disagree with some of their conclusions. But the general phenomenon (contrastive focus reduplication) is real. Just saw an ad on the subway talking about lunch dates and date dates.
