This was posted over a year ago.  I can't find anything regarding concealed fields now.  It was on the "Classic" DocuSign.

So....?

In the New DocuSign Experience (NDSE), when you add a text box to the document, expand the Formatting section in the right sidebar.  The "Hide text with asterisks" setting is the concealed setting from CDSE.
