I would guess that all of the insanely spicy peppers today were "created" by humans through selective breeding.

As I understand it, the evolutionary advantage of spicy peppers is to ensure seed dispersal through birds. The spiciness is meant to ward off mammals from eating it, but birds can't taste the spicy chemical so they eat that shit up, then fly away and poop out the seeds.

You would like a documentary called the Botany of Desire. It is all about your exact question. :) it talks about four plants and their "strategies" to survive by appealing to humans..tulips for smell/sight, apples for taste, marijuana for getting high, and I can't remember the last plant, but it's still a really interesting film.

I'm not a biologist so this might be wrong but what I heard was that the heat-causing capsaicin did in fact serve as an effective defense against many animals.

Crucially, birds can't taste it. So they happily eat the peppers and spread the seeds.

Similar, from what I recall, it actually is purely a defense.. just us cooking/seasoning is relatively new.

I think birds actually don't sense capsaicin so the idea is that it's okay if birds eat them and shit the seeds everywhere. but they dont want us to eat them and shit out the seeds.
