Mie Goreng, Naan Pizza And Easy Lumpia: Recipes To Try In 2017

It’s a new year, which means a whole new world of possibilities when it comes to recipes. This year, look for trends such as “creative condiments,” hummus, noodles, and Filipino-inspired food. Before you get too hungry, let’s get to the good stuff. Here are three delectable dishes to try in 2017.

Mie Goreng

Dan Churchill on Tastemade provides this easy and inexpensive dinner. Mie goreng is popular in Indonesia, Malaysia, and Singapore.

Ingredients:

  • 7 oz. vermicilli noodles
  • 3 tsp. sesame oil
  • 1 garlic clove, chopped
  • 1 long red chili, chopped
  • 3 tsp. ginger, grated
  • 1 bunch of bok choy, sliced
  • 1 tbsp. tamari or soy sauce
  • 2 eggs

Directions:

  1. Soak vermicilli noodles in cold water for at least 20 minutes.
  2. Add 2 teaspoons of oil to a wok on medium-high heat and sauté the garlic, chili, and ginger until it smells delicious.
  3. Stir in bok choy for 1 minute before adding the noodles and the tamari or soy sauce. Cook for 2-3 more minutes, or until noodles are soft but still hold their shape. Remove from heat.
  4. In small frying pan (or in an open space in the same wok), add the remaining oil and fry the eggs.
  5. To serve, portion noodles into a bowl and top with a sunny side egg.

Naan Pizza

This simple yet delicious recipe comes from Nigella Lawson’s Nigella Express. She uses fontina cheese, mushrooms, and thyme for this version, but the topping possibilities are pretty much endless.

Serves: 1

Ingredients:

  • 1 naan
  • 2 tsp. tomato puree (chopped and sieved tomatoes) from a jar or other tomato sauce
  • ½ cup drained mixed mushroom antipasto from a jar
  • ½ cup chopped fontina
  • 3 stalks fresh thyme

Directions:

  1. Preheat oven to 425 degrees F. Place the naan on a baking sheet lined with aluminum foil, baking parchment, or Silpat.
  2. Spread tomato puree or sauce over the naan, then pour the drained mushrooms and sprinkle over the chopped cheese before adding the thyme leaves stripped from the stalks.
  3. Cook in the oven for about 5 minutes; at this time the cheese should be bubbling and melted.

Easy Lumpia

The Skinny Pot gives us this fantastic basic lumpia recipe. If you want to mix it up, add shrimp, shredded cabbage, spinach, bean sprouts, or substitute the beef with ground turkey or pork.

Ingredients:

  • 1 stem leeks, chopped (or one medium-sized red onion)
  • 4 cloves garlic, chopped
  • 1 ¼ cups carrots, chopped
  • 2 lbs. ground beef
  • 2 tablespoons cooking oil
  • Dark soy sauce or salt to taste

Directions:

  1. Heat cooking oil in a skillet. Add garlic and leeks and cook for around 2 minutes. Add carrots and cook for 2 more minutes.
  2. Add ground beef and cook until the beef is no longer red or the meat is cooked through. Remove and drain the excess oil. Season with soy sauce or salt and pepper. Let cool.

Assembling the lumpia:

  1. Prepare a bowl of water to use as a sealant. Carefully separate the lumpia wrapper and place them one at a time on a flat surface or on a large plate. Place a heaping 2-3 tablespoons of the filling diagonally near one corner of the wrapper; leave a 1 ½-inch space on each corner. Fold the bottom and top edges of the wrapper toward the center. Moisten the last edge with the water to seal. Repeat using the rest of the wrappers. You can cook the lumpia immediately or freeze them.
