The MGTOW Omelette:
If you're in America, leave two eggs out on the counter to get room temperature.
Heat small pan on slightly over medium on most stoves(5-7ish) on most of those type stoves. If gas, flame barely touching pan, not firing around it. We're not searing steak, we're getting temperamental egg just done.
Drizzle a good tablespoon of EVOO in the pan. I use the same deli meat ham I buy for sandwiches, roll it up, and slice it into little pieces over into the pan. Optional: add diced onions/peppers that you already had ready, sitting in a little water in a Tupperware bowl in the fridge. They can be fine like that for at least almost a week.
While that is cooking... Mix in just enough milk to change the viscosity(look at how it wants to separate) to look more like an even homogeneous batter. Doesn't take much, what you spill from the jug trying not to pour too much will likely be more than enough.
Optional kick: dribble in a little Sriracha, but not so much to change color- unless you're that guy at breakfast too.
When ham/onion/whatever is hot/done enough for your liking, spatula it out on your plate. Put hot pan back on eye, and I rub or drop in enough butter to bubble up, and coat the pan. Also this makes sure pan is hot enough to bubble, but not burn the butter.
If so, immediately pour in egg mixture. Occasionally roll pan around, letting the liquid fill in around the edges, and if a bubble comes up, pop it, and immediately let liquid fill in the hole. As soon as no more liquid flows around, toss your meat on one side, and cover with a good melting cheese. Colby Jack is an example. Optional: crack a little black pepper over the whole thing now.
By the time you get all this on there like you want it.. you can jiggle the pan, and see it all move solid together, and the egg is done enough to slide the spatula under, and fold the non meat side over.
If you like a little brown on there, and it's not there when you flip it, turn up the heat a bit- but watch it, and flip it back and forth or it will burn easily. Hopefully someone enjoys:)
