I always referred to women as females. I don't know when that started and I just recently found out it's offensive. I'm a female. I've had people respond assuming I'm a man b/c I use that term.

It's not offensive in and of itself.

It only gets offensive when the speaker refers to all XXs as "females" and XYs as "men" or "boys."

Part of the problem comes in because proper English usage is to refer to female humans under 18 as "girls" and over 18 as "women." But what if you're not sure of the age(s) of your subject(s)? Or if there are multiple people of a variety of ages? In that case, "female" is a value-neutral term that is an easy go-to for people who mean no offense and are simply trying to be grammatically correct as well as succinct.

I recall seeing men complaining online about being called "males" or "white males" (" 'White male WHAT' ; horses? Dogs?" etc, was a common rejoinder) by liberals/feminists (this was before SJW was a term) ; this was circa 2002-2004 or so. I'm guessing the whole "Female" thing started as a tit for tat thing back then, and it's just become a habit now.
