There's some huge fan patches out there that fix a ton of bugs and lots of different mods to change the combat.
I think there's even a dark souls combat mod IIRC.
I happen to love anything those scallywags put out.
I love Skyrim.
I actually prefer Morrowind and Oblivion over Skyrim.
Bethesda's been spinning their wheels and Skyrim was the beginning of it. It's super hard to go back to now as a result.

Playing WIII at the moment and I love it.Have you played Witcher 3 recently? If you have then probably not. Skyrim is decent, but I don't think it's the amazing GOTY contender others do. You're pretty dead on when it comes to what it is.
Plus, the soundtrack always gets me <3 It might just be nostalgia because of the place in my life I was at the first time I played the game and heard the music, but wandering though the woods with certain tracks playing can make my chest tight they're so good.
It's very pretty and has great atmosphere, though, especially with mods, so if you want a game to just explore in, it can be pretty good for that.
I really enjoy it for what it is, and have put 100's of hours into it. But there are some huge problems with the game like you've mentioned.
I haven't had really any issues with bugs on PC, I think the gameplay is okay, and the AI is definitely bad. There might be some mods to fix some of those things, but over all if it isn't your type of game, you probably won't like it.
Maybe ask your friends if you can play one of their games for a bit?
No consequences, depth, nothing. You can do everything! And it is all meaningless.
Finished all the big quests and all that it does is change the dialogue of the guards. Makes the world feel so lifeless.
But my roommate at the time played through it like, 4 times with a bunch of different characters. Boggled my mind, I couldn't understand why.
But now I understand it is just how Bethesda games go. So I just stay far far away.
Terrible storytelling. Only thing that stuck with me is Fus Roh Dah.
For the most part the characters are uninteresting.
Bland world littered with fetch quests.
And the other content is just a slight veneer over that.
Witcher 3's combat often is described as not great next to Bloodborne.
Skyrim's combat has worse than combat in Animal Crossing. In that it'd be a better game without any.
I'd recommend the Souls series or Dragon's Dogma instead.
It's sandboxy as hell, though. If you have mods and don't take things too seriously it's possible to have fun.
Theoretically. For me, it was the first TES game I didn't even try to finish. I guess that's that.

Although please note that if you play the new remastered edition, most mods won't work at all.

I did notice that on GAF, Bethesda made RPGs get one hell of a bad rap. I still think the complaints people have are valid though. Personally, I never minded the occasional jank of Skyrim. I'm sure there are games that you have personal interest in and that you would most definitely enjoy. Stick to those for now, Skyrim isn't that hot.
I think it mostly comes from them not being good RPG:s, they can be fun sandboxes for people who enjoy that kind of stuff. Shooting and looting. Fallout 3/4 for example are much better as open world shooters than RPG:s. Also Bethesda has somewhat tarnished part of Fallout's legacy. I guess if you don't like Bethesda games, then you probably won't like Skyrim... cause it is a Bethesda game after all. Seems like a weirdly obvious thing that has been pointed out over and over though.
I recommend playing in 3rd person.
