Just to point something out...this isn't exactly a healthy salad. 1/3 cup oil, 1/3 cup pine nuts and 1/4 cup cheese add up to a lot of calories.

If you use all the dressing it adds up to 459 cal each, presuming 3 servings. That's not bad at all, and it's likely you'd use a lot less dressing too.

edit: used cooked rice figure because I was on my phone, it's 597 cal for 3 people with all dressing used.

There's little to no "salad" compared to the rest of the ingredients. It's essentially rice drenched in oil and cheese with a large amount of pine nuts.

Just for funsies I figured the nutrition facts of the recipe, including all the vinegarette and split into 3 servings. About 600 cal per serving, which isn't bad for a dinner salad.
