Just to point something out...this isn't exactly a healthy salad. 1/3 cup oil, 1/3 cup pine nuts and 1/4 cup cheese add up to a lot of calories.
Delicious I'm sure =)
If you use all the dressing it adds up to 459 cal each, presuming 3 servings. That's not bad at all, and it's likely you'd use a lot less dressing too.
edit: used cooked rice figure because I was on my phone, it's 597 cal for 3 people with all dressing used.

That's not adding in the rice or the cheese, and keep in mind that this is supposed to be a salad.

I put the entire recipe into myfitnesspal, so yes, it does add it in.
It's only unhealthy if you eat the entire thing in one sitting.
There's little to no "salad" compared to the rest of the ingredients. It's essentially rice drenched in oil and cheese with a large amount of pine nuts.
None of which are unhealthy so long as you aren't shoveling them into your gullet.
Neither is a Big Mac by that logic. Nor a tub of lard, "so long as you aren't shoveling them into your gullet."

Just for funsies I figured the nutrition facts of the recipe, including all the vinegarette and split into 3 servings. About 600 cal per serving, which isn't bad for a dinner salad.

...more than half of those calories are fat though. I mean, you'd be better off eating a Big Mac.
edit: lovely how simple facts get shitted on and downvoted on reddit. People will believe what they want to believe, facts be damned. And in this case, this "salad" is more caloric and more fattening than most food McDonalds serves. You may say whatever you want about "good fat", but calories are calories, and this food will make you fatter. This is neither light, nor "heart healthy" if eaten as served. It would be like eating a slice of orange next to a serving of french fries.

You are spreading misinformation that can harm people's health. A Big Mac is better than this? WTF dude? There is not a thing in this recipe that is unhealthy when eaten in reasonable quantities. Olive oil is widely believed to be one of the healthiest foods in existence. Nuts are healthy as well, many nutritionists even say they are an essential part of a well balanced diet.
Fat is not evil! No, you shouldn't deep fry everything, but a raw olive oil dressing is REALLY FUCKING GOOD FOR YOU.
You're spouting more nonsense than an eighties sugar executive.

You're more than welcome to try a civil debate about this, but you didn't address my main point, which is that this "salad" is more caloric than a big mac. Doesn't matter really how "healthy" the calories are, if they're calories, they will make you fatter, and America is in the midst of an obesity epidemic.
There are plenty of foods one can eat that will fill you up without binging on calories. This is not one of them...in fact most of McDonalds' menu will probably be lighter than this salad.

Quantity plays a role, but so does quality. A meal consisting of 500 calories of complex carbs and quality fats and protein is a better choice than 400 calories of processed grains and modified fats and protein.
And that's not even mentioning the host of good stuff from all the fresh fruits and vegetables!
Quantity of calories is not everything. If you truly believe that a slightly less caloric processed meal from McDonald's is healthier than this salad, than you are either sadly misinformed or a fool.
It takes a lot of effort to get obese from fresh, whole food. Nature did not intend for us to twiddle about with calorie counts.

This moron is also completely ignoring the inordinate amount of sodium that goes into Mcdonalds
At the risk of arguing with a troll, I will simply point out that this "salad" contains about as much sodium per serving (assuming the 3 servings distribution others have used) as a Big Mac. This salad contains at least 750 mg of sodium, and a Big Mac has 1000...for fewer calories.
/u/Anemoni must have messed up when he inputted the figures, because 1 tsp of salt contains 2300 mg of sodium. Divide by 3 and you get my numbers, not his.

Quantity of calories is not everything.
It is what matters when it comes to the point I'm making, which is weight gain => obesity, and this "salad" will get you there faster than other healthier alternatives. For example, you could eat 1 pound of straight arugula compared to the various amounts of oil, cheese, and nuts in this "salad" and achieve a calorie intake less than 1/10 that of this salad and arguably be just as full. Not saying that would make an appetizing meal, but it would be far less calorically dense. You can add it in with lean protein to attain balanced nutrition.
Most nutritionists would disagree with you. You probably think nature didn't intend for us to understand it. I mean, just to turn your nihilistic argument against you, maybe nature didn't intend for us to "twiddle about" with "trans-fat" vs "monounsaturated fat". Maybe fat just makes you fat.
Let me put it this way...if olive oil was really so good for you, why don't you drink it like a smoothie?
Jesus Christ dude how far up your ass did you get your head jammed?
Nobody is denying that a straight arugula salad has fewer calories than this! News flash: you cannot survive on nothing but arugula! What are you, a fucking rabbit??!!
So this recipe is built to taste good as well as be healthy. What a crime! All food should be cooked with only its nutritional value in mind!
Because anything in excess is a bad idea you fucking twit. If you got all your calories in a day from fucking arugula you'd probably get pretty sick too.
(Oh, and I do drink a small cup of olive oil most mornings before breakfast. A SMALL CUP. LIKE A SHOT GLASS. NOT A FUCKING SMOOTHIE. ITS CALLED MODERATION.)

Then let's just leave it at that, cut out your rabid flaming, and just say we agree on this point, because that really has been the only point I made. This salad is highly caloric. The serving size should probably be a lot smaller than it is, or perhaps arugula should comprise more of the bulk of what's there. Because people will probably eat this salad as part of a balanced meal, not realizing that the salad alone contains 1/3 of your daily salt intake along with 1/4 of your daily caloric intake as the serving size stands right now. People will eat it along with a main course, which will probably be another 500-600 calories, bringing in this one meal, without anything else, which people will think is "healthy", to over half your daily caloric intake, resembling something you'd order at McDonald's on a caloric basis.

Thanks for the civil discussion.
You fucking rabbit.
