There aren't a ton of people I found saying it was awful but a lot of the random responses I saw on other posts were "it was pretty alright, I gave it a 7/10" or stuff like that.

It gets way better in the second season, Azuki is by no means a plot device.

Well, the anime was kind of for Azuki and Ashirogi Muto. Being a successful mangaka was for Takagi and Mashiro only really.
