It's the angle. The gif shows the side. If we look from front, probably, there is a decent gap between his throwing hand and cutting hand. Also, his cutting hand moves only vertically. Not much horizontally. He quickly retracts his throwing hand and only then the cutting hand proceeds. phew!

Also, What are you using 20,000 lemons for? and is it ok if they're cut very poorly? because this guy isn't cutting lemons in half he's cutting a third off of one, a 1/4 off of another, missing some completely. What are you looking for? I'm sure there's a better way to do it than throwing a lemon and swinging a knife.

It wouldn't work as well because in order to cut a blade relies on its edge being 'dragged' across the surface and the tiny imperfections on the blade slice through it. Even a very sharp knife won't cut as well by simply having a fleshy fruit pressed against it, you'd compact them quite a bit before it cut.

You'd have to rig the knife onto some sort of oscillating device like a reciprocating saw for best results.
