Try it at your own risk. I sure as hell would not eat something cooked in a plastic bag for 4 to 8 hours.

Almost every restaurant will use these to hold soups and such in a hot well. At the end of the night, the liquid is poured into a new bag, sealed, and stored to be repeated again. the plastic is very thick and resists heat to the point of no change after being held at a boil for a while. These are also used for sous vide. The only time I have seen one of these melt, someone put it in a pot of water on high for long enough that it was on, water-less, for about 30 minutes.

They're totally fine, they're just like the bags you cook turkey in. You can be one of those "it's plastic it must give me cancer people" if you want, but those bags are tested and proven to be food safe.

They have studies that have proven it's safe. Should I just avoid everything even remotely suspicious because it might give me cancer? Even things shown to be safe in a controlled, scientific setting?

Certain plastics certainly are considered a cancer risk when you heat your food in them.
Maybe others we haven't studied enough long term to really know. Further, these sorts of things are highly difficult to do proper long term studies to isolate out and see what is causing what.
Looks to me like it wasn't until 2007 that we really got the BPA train going and established that it was causing health problems. It is only in recent memory that I have started seeing products advertised as BPA free.
I'm not a lazy fucking slob, so I'd much rather just err on the side of caution. My slowcooker has to be one of the easiest god damn things to clean in my kitchen. If it is really and truly fucking crusted then put some water in it with a few drops of soap and put it on low.
