Slow day here on the slow cooking sub so I’ll give everyone a recipe to look at.

Some may know of Café Rio, West coast mostly, akin to Chipotle. This is a copycat Sweet Pork recipe.

I found this recipe year’s ago but never made it, I did pass it on to my sister though. She shot me a text raving about how the kids and her husband loved it so I thought I’d give it a whirl.

It is a two step process, not including the marinade, so allow time for that. In the end I was not as fond of it as my wife and kids, they loved it! I put that on the sweetness, I’m a savory guy. Easy solution, added some of this to my portion! Hold on, this is pretty good!!

I did not take pictures so I used one with permission from another site.

Cafe Rio Sweet Pork

2-3 lbs. boneless pork, cut of your choice

1 12 oz. can Coke, people have used Dr Pepper

1/4 c brown sugar

1 12 oz. can enchilada sauce

2 cloves minced garlic

1 small can diced green chilies

3/4 C brown sugar

Marinade pork for at least 2 hours or overnight in can of coke and 1/4 C brown sugar.

Pour pork and liquid into crock pot and cook on low for 8 hours or high for 4 hours. Remove meat and shred. Discard liquid

Put meat back in crock pot and add enchilada sauce, garlic, green chilies and brown sugar. Cook for 30-60 more minutes. If there is excess liquid drain some off.

Almost every restaurant will use these to hold soups and such in a hot well. At the end of the night, the liquid is poured into a new bag, sealed, and stored to be repeated again. the plastic is very thick and resists heat to the point of no change after being held at a boil for a while. These are also used for sous vide. The only time I have seen one of these melt, someone put it in a pot of water on high for long enough that it was on, water-less, for about 30 minutes.

They're totally fine, they're just like the bags you cook turkey in. You can be one of those "it's plastic it must give me cancer people" if you want, but those bags are tested and proven to be food safe.

They have studies that have proven it's safe. Should I just avoid everything even remotely suspicious because it might give me cancer? Even things shown to be safe in a controlled, scientific setting?

Certain plastics certainly are considered a cancer risk when you heat your food in them.

Maybe others we haven't studied enough long term to really know. Further, these sorts of things are highly difficult to do proper long term studies to isolate out and see what is causing what.

Looks to me like it wasn't until 2007 that we really got the BPA train going and established that it was causing health problems. It is only in recent memory that I have started seeing products advertised as BPA free.

I'm not a lazy fucking slob, so I'd much rather just err on the side of caution. My slowcooker has to be one of the easiest god damn things to clean in my kitchen. If it is really and truly fucking crusted then put some water in it with a few drops of soap and put it on low.

Either way, it's so good. Because of the post I had a burrito, no rice, pinto, with fire grilled steak. Enchilada style obvi. And it was free.

There's one in Frederick also. There used to be one here in Hagerstown but for some reason people think Chipotle is better so I'm assuming Cafe Rio just didn't have enough business. I was very sad about them closing after 6 months or so. Being from the west coast it was the closest thing I found to fresh and tasty tortillas, which is my basis for tasty Mexican food. While I'm ranting, the Mexican food out here is god awful. Why is it all so salty with no flavor?

Good question. I can see how it may not be required due to the cook times. I've always done long marinades whenever I cook, except for seafood. Guess if it ain't broke, don't fix it!

I won't comment on the liners as everyone has their own opinion. You can Google it to determine whether or not you'd like to use them.

  • I won't use them because they leach chemicals into your system or your to lazy to wash your pot.

  • There's nothing wrong with using them. Next, be prepared for a rash of comments from the people that posted my first bullet point.

I don't use them but.... It's a stable plastic that doesn't break down with heat nor mild (edible) acids. Not all plastics leach out toxins folks. And how many people are hating on this product but have heated a non-stick teflon pan empty and inhaled noxious fumes. Whisps of poison smoke coming from a plastic coated pan should bother you more than these bags but most of you people still insist that you can sear a steak in a non stick pan.

I love using them. I live in a tiny apartment with a really small sink, my crock pot won't even fit in there, and I have about 3 square feet of counter space. No difference in flavor, texture, etc. I love peeling them off and tossing in the garbage, and just give the pot a wipe with a damp cloth.

Only drawback I have found (for me-YMMV) is when ingredients are supposed to be mixed in the slow cooker, enthusiastic stirring can damage the bag and cause leaks. I just lower the enthusiasm, or mix in a bowl.

I like them. I generally try to avoid plastics, but the convenience is really great. I guess it is kind of a judgment call for each person. It really does make clean up incredibly easy.

As an avid devotee of Cafe Rio and their pork barbacoa, my suggestion is in a burrito. Keep it simple cuz the meat is the star here.
The way I get mine is with cheese, pinto beans, and always go enchilada style with extra sauce and cheese on top.
Cafe Rio is rad in that they give you lettuce, tomato, diced onion, etc on the side so you can pick how much you want with each bite and it never gets soggy.

I didn't cut the pork up so I just had a 2.5 lv piece. It could have used more sauce, more peanut butter. I enjoyed it, but I know what to do different next time. It was different than a basic roast and bbq so I'm appreciative of that!!!
