It looks medium-rare to me, looks like the fat at the center has been completely liquified, it just has barely any sear on it. Tenderloin is a lot redder than other cuts of beef, and this was cooked in an oven so it can have more even doneness instead a larger gradation between the sear and the center if it were cooked on a surface.

They might have used sous vide too, I don't know, didn't read much of the comments from the OP.

Lots of things. Infection is the obvious one, but probably takes the longest. You can drown very slowly from fluid in your lungs due to inhaling air in the fire. You can die of dehydration because your skin isn't keeping the water in your body from just evaporating. You can die from toxic shock, from just having so much necrotic tissue your body tries to absorb. Many others ways I'm not aware of as well.

Even more specific, it was about a state's right to sell slaves to Kansas. They wanted Kansas admitted to the US as a slave state, because it was going to be a slave selling bonanza.

At this point slave importation had already been stopped in the US, because the slave breeding industry was becoming huge business in the south.

Yep, exactly why you gotta take sous vide seriously. Usually these ziplock and sink methods are under an hour so it's not as big of a deal, but the big day-long immersions can get risky if you leave air bubbles in.

For those that don't know and are confused by what's going on.

Meat pasteurization doesn't exactly work only by reaching a minimum internal temperature. There's a curve based on temperature and time spent at that temperature. This is how sous vide can pasteurize a steak while not coming anywhere near the commonly recommended internal temperature that you'd measure with a meat thermometer. The FDA actually has equations available for determining safe temperature and time for various meats and eggs.

This also ends up giving you some neat sous vide tricks, like one where you can pasteurize an egg without cooking it, so it's now safe to use raw if you're worried about salmonella.
