I was attempting to explain to my sister about the naacp deal and why it was so offensive to poc, and she said it was racist that I used the term "poc". I am white and I see everybody using that term, have I been overstepping my bounds?

No, using the term POC is just fine. It’s a hell of a lot better than “minority” or “racial minority.” Now THAT shit is annoying as hell. Long as you’re sticking to an American context, using the term POC is just fine. Don’t worry about it.
