Origins: on a road between the Tarentaise and Maurienne Valleys, Belleville Valley began developing as from 2000 B.C.
In 1976, René and Marie-Louise purchased a potato field to create the restaurant La Bouitte (which means “little house” in the Savoyard dialect). There they began treating their guests to simple, generous Savoyard fare. Joined in 1990 by their children Sophie, Maxime and their spouses Florent and Delphine, over the years they built the chalet of their dreams, carved wood, harmonised the noblest materials of their ancestral region.
Since being awarded a second Michelin star in 2008, expanding in 2011, and recently in 2015 the 3rd star, La Bouitte unceasingly enhances its personality. “Born hard workers”, “lovers” of their native Savoie, building is in their genes. With their own hands, they fashioned La Bouitte, giving the establishment a local foothold and sound roots. Today, gourmets from around the world and mountain lovers gather here to find fare with authentic flavours.

Working hand-in-hand with their loyal staff, day after day, the duo René and Maxime Meilleur compose subtle gastronomic scores in the idyllic setting of their Savoyard chalet. The new kitchen (over 100 m²) with its state-of-the-art equipment promotes inspiration. It features a table d’hôtes “La Table des Meilleur” in a lovely vintage wood decor for 6 guests to enjoy a thrilling experience dining to the pace of two creative chefs. Here, hospitality rhymes with pleasure. Harmony, cheer and understanding your wishes prevail.
In keeping with the image of restuarant and the new dining room looking our over the mountains, the cuisine at La Bouitte is natural and enticing. In harmony with its environment, it draws its strength from products brimming with connotation and history.
The quest for perfection gives way to refining recipes, purifying their creation and gradually approaching a certain notion of completeness and distinction.

fera, char and perch from Lake Geneva and Lake Bourget, heirloom vegetables, chanterelles and cep mushrooms, truffles, Tarentaise beef, distinctive hams, “confidential” cheeses (serac, Termignon blue, Persillé Tignes), in addition to freshly-picked fruit, herbs and wild plants! .

Teach their way of cooking, sharing their expertise and experience is the pleasant challenge embraced by René and Maxime Meilleur each year a for several weeks in summer.
To offer such courses to interested individuals, they have created 2 packages: a 4-day course from Sunday evening to Thursday afternoon, with or without accommodation. Afterwards, you will have the opportunity to sit out on the terrace and enjoy the dished you have prepared.
To keep the focus on the quality, the number of participants is limited to 8 per course.

TOTAL IMMERSION COOKERY WORKSHOP
In additional to the traditional courses (see page 9), René and Maxime Meilleur now give real enthusiasts the chance of a half day total immersion with La Bouitte's brigade and how they operate. An exceptional opportunity to discover the life, rigour and creativity of this team of 20. Workshop for one to three participants, subject to the Chefs' availability. The workshop starts between 8h30 and 9h and finishes at the end of the lunchtime service (at about 15h). 175 € per person.

Encouraged by its first year's success, La Bouitte organises, for the third year running, exceptional themed evenings about the greatest wines on the planet. They are a delight not only for wine experts, but also for amateurs looking for a discovery and a sharing moment. They prime excellence, simplicity and conviviality.
With a superb cellar of 1001 references, La Bouitte has already distinguished itself by the creation of innovative oenological events (analysis of the influence of altitude on wine tasting ...).
Once a month, La Bouitte will give carte blanche to a wine grower to present guests a selection of their greatest achievements. These events will revolve around a series of food and wine marriages. An opportunity to sample not only famous great wines, but also to reveal some future "greats as well as less known vintages. And to understand how a culinary composition is transcended by a wine, and vice versa.
The presence at these dinners of the most brilliant wine critics (Michel Bettane, Bernard Burtschy) will encourage passionate exchanges making these evenings even more interesting.

11/02/2015: quintessence of geology and biodynamics. From Rangen de Thann to Brand, Olivier Humbrecht from the Zind Humbrecht Domain offers us an evening with some of the greatest white wines in the world.
March 2015 (day yet to be fixed): an immense privilege and delight to taste the wines from the Romanée Conti Domain, in the presence of Aubert de Villaine (owner and manager).
16/04/2015 : Dominique Belluard shares his passion for an local identity and a forgotten grape (le Gringet): wines with character, amongst the most successful in the 2 Savoys.
These evenings will start at 19h30. They are offered at very preferential prices (from 190 € per person), including a Carte Blanche 5 course menu, a selection of water and all the wine offered by the winegrowers and La Bouitte. After enveloping and calming movements, the Alpine herb packets are heated then delicately applied. This novel massage combines relaxation and vitality.

Without ever deviating from an incontestable simplicity, La Bouitte (« little house » in the local Patois) continues its quest for excellence, both in the kitchen and in the standard of its services and welcome. In 2012 this was rewarded by an entry into the select circle of the « Grandes Tables du Monde», (Great restaurants in the world), which brings together 149 of the best restaurants in 22 countries over 4 continents. Its values are a passion for taste, the protection of heritage and an innate sense of lifestyle.
FOR THE LAST TWO YEARS LA BOUITTE HAS EXPERIENCED THE MOST IMPORTANT EVOLUTION OF ITS HISTORY
With the help of the architect Alain Feuillet, René and Maxime Meilleur have really made the best of the adjacent house, acquired in autumn 2011. As well as strengthening its identity, La Bouitte has gained in comfort and space. At the end of 2011 and in 2012, a new Baroque dining room, a new kitchen, a “table d'hôtes” and new living areas have been created.
A superb chalet has been created adjoining La Bouitte with a lounge – seminar/incentive room, a new cellar and garages. 6 bedrooms and suites have come to life, making La Bouitte even more up-market. Amongst these, the panoramic« Marie » suite, 75 m², benefits from windows on three of its sides, wonderful exposed roof beams, a cosy sitting room with open fireplace and a superb bathroom with balneotherapy jacuzzi and shower.
For these new bedrooms, La Bouitte's spirit persists : authenticity, cocooning, but also a sense of detail and an enhanced quality of equipment. For the interior decoration and furniture, René and Maxime Meilleur combine with obvious pleasure, the typical Savoyard identity (popular refined art, Baroque heritage …) with a more designer touch.
As for the restaurant, the kitchen has once more been expanded with an area dedicated to the pâtisserie department (its total surface area is now 150 m²). It now multiplies the possibilities available to the 2 chefs and their 20 cooks (absolutely precise cooking times, optimal organisation, more functional cookery courses with their clients ....). A full time baker has also been recruited.
This year, we will focus on receive seminars by fiting out a conference room to welcome entreprises who wish to have a nice stay with us.
A programm of activities like cooking courses, winter sports,hiking, canyoning and rafting, SPA activities,, discovery of René and Maxime's cooking, lunch in a mountain restaurant... will be proposed to help them to spend real good time.

La Bouitte's chalet is located in Saint Martin de Belleville near the slopes, we provide transfers to the main building where the restaurant is located. Representating the expertise and the welcome quality of la Bouitte as a typical Mountain Chalet... It has 3 bedrooms with double or single beds, bathroom and shower room, kitchen and laundry. The large living room offers a fireplace and access to the terrace facing south-east.
