They really should have ended with Tenzin and Korra or the whole Team Avatar going through the portal. It just felt that Bryke caved in and went what the vocal minority wanted.

Who sacrificed good writing? It's not like they dove face-first into each others' crotches at the end or something. What we saw is a very close friendship that looks to be budding into something more. Why is that somehow bad writing?

Yes, and I was okay with how the scene was depicted and with Korrasami as a pairing. What I have a problem with is the storytelling portion: the build-up, the development of that relationship, and how other characters (who had their own character arcs going on) were neglected for the sake of that pairing.
Hell I'd have preferred them to shorten Wu's scenes or something just so we could've had the writing tell Korra's story more. Her relationships with her loved ones, not just with Asami (which in my opinion was poorly developed as a potential romance--their relationship could literally be mirrored by any platonic, close female friendship). Mako and Bolin get the short end of the stick of course. Her parents? Naaaah. Katara? Hah, that's a funny joke.
People chuck it all up to LOK not having enough time or budget for the amount of characters it has, but good writing can masterfully craft stories and generate genuine, resolved relationships and character arcs in very few episodes (recent animated series Over the Garden Wall comes to mind). LOK sadly did not have that.

My GF asked Bryke (during a book signing) right after Book 1 was done airing and they said they had absolutely no plans for a relationship for Korra for the rest of the series.
edit: Ugh. This was when Book 2 was in production.

It was my understanding that Nick ordered 3 more books of Korra after Book 1 was done airing due to the popularity.
If they didn't start thinking that far ahead, then I don't think we're dealing with the same, or as good of a writing staff as TLA.
I didn't ruin my own point.

To illustrate the length of the production process (about 10 to 12 months per episode[24]) and the overlap of the various phases, Konietzko wrote in July 2013 that their team was already developing the storyboards for the first episode of Book 4 while the last episodes of Book 2 were not yet finished."

So, I bring you a true story from the creators of this show, that they told an entire packed book store at The Grove, and you're telling me that they can change their minds. I get it, so basically they just told the bookstore: "fuck you all, LOL" ?

What lie? My entire point was that sometimes people change their minds. Sometimes stories evolve as you're writing them. When they said they had no plans for another relationship, they were almost certainly telling the truth at the time. That doesn't mean that they couldn't have changed their minds later on as the story developed.
You can't expect the plans for a story that were created in book two to remain exactly the same over the entire course of three full books. Plans change, characters evolve, sometimes in directions you didn't expect them to. It happens, anybody who writes knows that it happens. It's not at all uncommon.
Just because your plans change later doesn't mean you were lying about what they were at the beginning.

I get that, but I would think two writers of a hugely successful universe would think a little less from the hip and strategize more and not change their minds on a whim, especially after being VERY firm about telling a packed bookstore full of people this information.

I'm not disputing anything. You are presenting evidence about what they planned to do during book two, all I'm saying is that it's entirely possible that their plans changed at some point between then and now. Those two assertions are not contradictory at all.
I'd say that final scene is pretty compelling evidence that they did, in fact, change their mind at some point.

No problem... I understand, I've been there myself. I try to remain civil no matter who I'm talking to or what I'm talking about, but I don't always succeed... especially since I tend to fall right into the middle ground of most issues I end up discussing.

Before book 2 even started airing, the actors were discussing scenes from book 3 & 4 (Asami turning up with an airship, Grey Deslisle's character, etc). The Korra and Asami thing was built up in nearly every one of their interactions from the first episode of book 3, when they suddenly started becoming strangely good friends after almost never speaking to each other.
Most of it was almost certainly recorded way before we even saw Korra break up with Mako. The fandom over the idea grew because it was told in the show, the show didn't tell it because the fandom was growing.
