You know what man, you're right. There is a ton of shit I just don't know. I can cook food, no problem. My brain is a fucking cookbook. Yeah, it has a few beer stains on it, but I can still read it for the most part. I can debone a chicken in under a minute, but I don't know what it took to raise that chicken. I don't know what it took to grow those vegetables. I don't know scientific names for any of the things I cook with. Hell, I'm pretty ashamed to admit that I don't know where a majority of the cuts of meat come from on a cow or a pig. I couldn't butcher a whole cow, but I can clean the hanging tenders with little to no waste. And sure, that's difficult. But it only takes a few minutes. How many years did it take to raise the cow? How much food and resources did it take to make that piece of meat? How long did it take the butcher to break the whole carcass down? Was it a butcher or a machine? Can a machine break down an entire cow like that? I do have a very shallow knowledge of the ingredients I use. But I crank a pretty serious volume of food out of my station. Like an appalling amount of food. Every day. And our walk in is always full of more. And it's a shame that people just don't finish their plates. How often is that because of my cooking ability? I wonder how much food I've wasted because it wasn't cooked the right way for a customer. I mean yeah, my number of mistakes has gone down since I've settled into my position, but I still make them. All that time and effort it took to raise that chicken breast. Overcooked by 45 seconds. I didn't even get yelled at. I did get yelled at back when I was a prep and I dropped 5 gallons of liquid eggs that took me an hour to crack. I don't even want to think of the work that went into making those eggs. Especially because I had to clean them up and start over. Five more gallons. Nobody knows shit about food. It's pretty sad. Also, screw you.
