In the award-winning Circa restaurant, head chef Ashly Hicks and renowned chef / director Stephen Burke have created a menu focused on seasonal eating with a spirit of fun and exploration – small, medium and large plates – unstructured and electric.
Paul Wilson says: “We’re so lucky in Melbourne, we’re exposed to so many cultures and influences – Asian, indigenous, European – and we eat according to the season, how we feel, what we want. We wanted to embrace that.”
