Abstract:
PURPOSE: To color boiled crab paste to give a product, having a spotted pattern rich in change and more resembling genuine crab meat, by wrapping a rodlike core material of bundled boiled fish paste fibers in a film layer prepared by double spraying red and white ground fish meat under a low pressure.
CONSTITUTION: Film materials 2 and 3 consisting of red and white ground fish meat materials are sprayed on a plastic film 1 under 0.4W2.0kg/cm2, preferably 1.0W1.4kg/cm2 air pressure to form a film layer, which is used to wrap a rodlike core material 4 of bundled boiled fish paste fibers and color the boiled crab paste.
