Mmmm, Blueberry Crumble Bars

I haven’t posted in a while, so thought it would be nice to share a yummy recipe with you.  My sweet 13yo daughter left for summer camp with the church youth group on Sunday morning.  EARLY Sunday morning.  So, we got up at 5:00 AM on Sunday (yuck) to get her there by 6 (we were still late, but we did make it) so she could load onto one of the buses for the SEVEN+ hour ride to the northeast corner of Washington state.  Since this is my “month on” to volunteer in the church nursery, I couldn’t just crawl back into bed like I ree-aaa-llll-yy wanted to, so I decided to make some treats for my room leaders.  Super easy and tasty, this recipe is a winner for me!  Enjoy!!

Blueberry Crumble Bars

Cinnamon Blueberry Crumble Bars

Ingredients
1 (18.25-oz.) pkg. plain yellow cake mix
1 C. (2 sticks) butter, melted
1 C. old-fashioned oatmeal
1/2 C. packed light brown sugar
2 large eggs
1 tsp. ground cinnamon (I left this out accidentally!)
2 C. fresh blueberries, rinsed and drained
1/2 C. granulated sugar

Directions
Place a rack in the center of the oven and preheat the oven to 350ºF. Set aside an ungreased 13×9-in. baking pan. Place the cake mix, melted butter, oatmeal, brown sugar, eggs, and cinnamon in a large bowl. Blend with an electric mixer on low speed for 1 to 1 1/2 minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. The mixture will be thick. Reserve 1 1/2 C. for topping. Transfer the remaining crust mixture to the pan. Using your fingertips, press the mixture evenly over the bottom of the pan so that it reaches all sides. For the filling, place the blueberries and granulated sugar in a small bowl and stir to combine. Pour the blueberries onto the crust, and spread with a spoon so that the berries are evenly distributed. Pinch off pieces of the reserved crust mixture and scatter them over the filling. Place the pan in the oven. Bake the bars until it is light brown and bubbling, 40 to 45 minutes. Remove the pan from the oven and place it on a wire rack to cool for about 30 minutes.  (I sprinkled a little extra granulated sugar on top, just for some sparkle!)

Cut into 24 bars.
