Yummy Strawberry Recipes

I love this time of year when strawberries are in season
and they are being sold freshly picked right out of the field.

Here in the central valley of California,
you can actually see the field they come from and the workers picking them.

I can’t help but buy a large flat.
Of course, we can’t always eat all of them.
So this year (after making a few strawberry shortcakes),
I decided to check out some new recipes.

My Thrift Store Herb Box

I was so excited when I found this little PINK box (yes, it was pink) with the handle at our local thrift store.  Price? $2.95, which made it even more exciting!  I had a few other treasures that I had swooped down on (before anyone else could) and put them into the little pink box – very convenient.  I was so proud of myself – I had something to carry my treasures in!  I was pretty devastated a few minutes later when the handle on my cute little box broke and all of my treasures fell to the floor (with a few of them breaking)…. worst part?  When the little box hit the floor it broke into 4 pieces (2 end pieces and 2 side pieces…and I was still holding the handle!).  I was so sad.

After getting all of my broken treasures (including my little pink box) up to the register (I was told I didn’t have to pay for anything, but I did anyway). I started inspecting my little box and I realized it would be very simple to glue it all back together.

With a little wood glue, some clamps, my cameo silhouette, black paint, glaze, and some sandpaper here is my broken little pink $2.95 HERB box!

My goodness I worked hard for this HERB box!

It was worth it…

I’m so happy with the way it turned out.

How To Paint Clay Pots

Happy Friday Everyone!!!

I have a super easy project to show you that I made in just a few hours (mostly paint drying time).

I’ve been seeing these adorable stacked clay plots in Blogland and wanted to make my own version.

Step 1:
I purchased your run of the mill, cheap clay pots from Lowes.  I sanded them a bit and washed them down with water.

Step 2:
I sprayed the pots (and dish it sets in) with an inexpensive gray primer.

Step 3:
Once the primer had dried I sprayed the pots with a Rustoleum (all weather) Black Gloss spray paint.

Step 4:
Once that was dry, I taped the pots off with some painter’s tape.

Step 5:
I painted the white stripes with Martha Stewart’s Paint that I had purchased at Michael’s and applied it with a brush.

Now your ready to put some pretty plants in!

Step 6:
In each pot, you will want to put a brick or two in, in order to make the next pot stand up.

Step 7:
Add your moisture control dirt and plant your plants.

I’m thrilled with the way the project turned out.
I haven’t decided if I’m going to add the house numbers to the largest pot yet.

Summer Bucket List – Thursdays With Tracie

Last year was the first time I had heard of a
“Summer Bucket List”

I love lists!!!!
That is the only way I ever get anything done!!!!!

So last summer, I began my own summer bucket list by writing down all the things I wanted to do with the kids for the summer and I stuck it on the fridge.  I am proud to say we finished everything on the list!  The only thing was, by the end of the summer the list was a mangled mess!

This year, I wanted to figure out a way to track all of the fun summer things we will be doing. I love the idea of looking back with the kids and seeing everything we have done for the summer!   Our bucket list needs to be hung up high (a mommy’s level) otherwise it will be used as a teething ring, paper airplane, or a mop!  So this is what I came up with:

I found this cute clipboard at Target in the dollar spot. I got out my scrapbook paper, letters, sharpies, summer stickers and a pack of clothespins.

On one side of the clothespin I wrote what we want to do this summer. Some of the items on our list are camping, tie dye, banana split night, library program, Splash Park, build a fort and Legoland.  On the other side of the clothespins I wrote “We did it!!”

My plan is to start with everything on one side and when we complete it, I will flip the clothes pin around to the other side (the side that says, “We did it!”) and by the end of the summer we hopefully will have all the clothespins flipped!!!

 With my Bored Jar and my Bucket List, I am ready for the summer!!

Have you ever had one of those weeks where it literally has been HELLACIOUS and it’s only Monday???? Well that’s MY LIFE!  I have to be thankful though.. they truly are luxury problems… so no whining on my part.  Promise!  I’m going to be thankful and count my blessings.  DONE DEAL!

Weight Watchers Eggplant Rollatini With Tomato-Basil Sauce

This is a delicious recipe that I made a few weeks ago.
Vegetarian and low fat.
Fresh Ingredients!
Only 5 Weight Watcher points!

Give it a try and let me know what you think.

Begin by preparing eggplant:
2 medium eggplants
Cooking spray

1.  Preheat oven to 450 degrees.  Coat a baking sheet with cooking spray.
2.  Slice 2 medium uncooked eggplants (tops and bottoms removed)  lengthwise into four 1/4 inch thick, long slices
3.  Lay eggplant in a single layer on prepared baking sheet and lightly coat tops with cooking spray.
4.  Bake, flipping once, until golden brown, about 10 minutes per side.  Remove from oven and set aside.

Sauce:
1 Tblsp olive oil
2 cloves sliced garlic (large – about 2 Tbsp)
2 cups canned crushed tomatoes
2 Tbsp basil, fresh and torn

1.  Place oil in a medium saucepan over medium-high heat.
2.  Add sliced garlic; saute’ until it begins to brown, about 1 to 2 minutes.
3.  Add crushed tomatoes, stir to combine and reduce heat to low.
4.  Add torn basil, stir to combine and simmer for 10 minutes.
5.  Cover, remove from heat and set aside.

Filling:
1/4 cup minced onion
1 small uncooked zucchini, diced
1 clove crushed garlic (large – about 1 Tbsp)
1/2 cup part-skim ricotta cheese
1/2 cup parsley, fresh, chopped
2 Tbsp basil, fresh, chopped
3 Tbsp grated Parmesan cheese, divided
1 large egg
1/4 tsp table salt
1/4 tsp black pepper, freshly ground

1.  Coat a large nonstick skillet with cooking spray; heat over medium-high heat.
2.  Add onion and zucchini; saute’ until onion starts to brown, about 5 minutes.
3.  Stir in chopped garlic and cook 1 minute more; spoon onion mixture into a small bowl to cool.
4.  In another small bowl, combine ricotta, parsley, chopped basil, and 2 Tblsp of Parmesan; stir to combine.
5.  Add cooled onion mixture; stir to combine.
6.  Add egg, salt and pepper, stir to combine.

Assemble:

1.  To make rollatini, reduce oven to 400 degrees.
2.  Spoon 3 Tblsp of sauce in bottom of an 8 x 8 inch glass or nonstick metal baking dish and swirl to coat bottom with sauce.
3.  On a clean cutting board, place 1 slice of eggplant.  Place 2 Tblsp of filling at the narrow end of the eggplant and roll up; place in prepared baking dish, seam side-down.
4.  Repeat with remaining eggplant slices; arrange in a single layer in dish.
5.  Spoon remaining 1/2 cup of sauce and remaining Tblsp of Parmesan over eggplant.
6.  Bake until sauce bubbles, about 10 to 15 minutes.

Yields 2 pieces of rollatini per serving.
Serves 4
