Haven't you heard that mind games don't really exist, and it's just a conspiracy theory made up by left-wing terrorists? Pochettino really just wanted to praise his opponent before an important match, and Mourinho just wanted to state that Tottenham is the best team in the country. It's not like they're football managers looking to gain even the slightest edge over their rivals, no no. They're just cherubs who love spreading happiness to the world in their press conferences.
