It was great. Two bites of joy. He was trimming the tuna for one of our dishes, and I was joking around with him about how I wanted some tuna. Came back downstairs to this magic.

Agreed, although I work in a Mexican restaurant, haha. We make amazing tuna tostadas in the style of the restaurant Contramar in Mexico City. That's the destination of the tuna. My chef used to work at a high end Hawaiian place though, so that's where this idea stemmed from.
